Sunflower Watercolor & A Pie Recipe

At my retreat, I did my watercolor class on the second day, and I did my normal thing where I used a flower image and taught the blending method one petal at a time. I happened to have this gorgeous sunflower stamp with me, so I stamped it in Fadeout Ink, and painted it with Daniel Smith Watercolor - just four pigments (listed below). I added a sentiment from this set - I was happy to ink up both of these for the first time. The sentiment set, which is the perfect size, does come with matching dies.

Now since this reminds me of fall, I have a fun fall recipe to share with you.

My friend Lois introduced me to boiled cider, and this was the first time I had a chance to try it in a recipe.

I decided to use a James Beard Foundation recipe, because how can you go wrong with James Beard?

I wasn't sure what to expect with this pie, so imagine my delight when I took a bit and it tasted like a cross between an apple pie and a lemon bar!!

It's a creamy, tart, awesome pie. So unlike any other apple dessert I've ever had. I love it - so give it a try. I bought my boiled cider here, or you can make your own. I wasn't able to find it locally.

Ingredients

• Pie dough for a 1-crust pie
• 2/3 cup boiled cider, or 2 cups apple cider, boiled down to 2/3 cup
• 2 tablespoons sugar, or to taste
• 2 tablespoons plus 1 teaspoon unsalted butter, melted
• 2 tablespoons fresh lemon juice (I used 4 packets of True Lemon - I do this for all lemon and lime juice in recipes)
• Pinch of salt
• 3 large eggs, well beaten
• 2 tart apples such as Granny Smith, peeled, cored, and coarsely grated
• 3 tablespoons packed light or dark brown sugar
• 1/8 teaspoon freshly grated nutmeg

Method

Roll out the dough on a lightly floured surface to a large circle about 1/8-inch thick or take it out of the Pillsbury box :). Fit it, without stretching, into a buttered 8- to 9-inch pie pan. Trim off the excess dough, leaving a 3/4-inch border. Fold under the edge of dough, pressing along rim of the pan and forming a high, fluted border. Chill the pie shell while you preheat the oven to 375ºF, with a rack in the lower third.

In a bowl, whisk together the boiled cider, sugar, melted butter, lemon juice, salt, and eggs. Add the grated apples and stir to blend well. Pour the filing into the pie shell; sprinkle the brown sugar and nutmeg over the top.

Bake until mixture is just set in the center, usually 50 minutes. (Mine took a bit longer)

Let the pie cool on a wire rack.
