Hello Sassy Pants! (Plus the best 3 minutes of your day)

Hey friends!

Checking in on you - I hope you are doing okay! I'm one of those people who love to cook, as you know, so I have a recipe for you today - but now that cooking is my unpaid part time job and not just a joy-filled hobby, it's not *quite* as much fun, but I'm so incredibly grateful for the cooking skills that started in my childhood home with my mom as our 4H leader, and just grew the older I got.

I would really put it, as a hobby, on par with crafting. I love it that much.

So it's been fun sharing things on Facebook - tips and tricks for all my friends who find themselves suddenly in the kitchen a LOT.

One thing I think everyone is super conscious of right now is having zero food waste. What a positive mindshift that is. I hope it sticks around after this hideous virus is gone. So my recipe for you today is focused on minimizing or eliminating food waste with a sweet result.

Okay - so the first recipe I shared was a photo tutorial for candied citrus peels! I did Meyer Lemons and oranges from a relative's tree! So easy and soooo delicious. You can eat them like candy, or add them to baked goods or cocktails. God knows we can all use a cocktail right now.

So here you go!

1) Juice your citrus or eat it!


2) Remove the pulp. I dig my thumbnail into the rind and can usually get it all out in one piece. Get started with a knife if need be.



3) Scrape as much of the pith out as you can. These are home grown Meyer lemons that were easy to pith. If not, no biggie - pith on other peels is fine!



4) this is about how much pith to remove. Less pith = sweeter.



5) A sharp ceramic knife parallel to your cutting surface removes pith easily. BE CAREFUL. Use all your wits and knife safety rules!



6) Pithed vs. Really Pithed. Both are fine.



7) If you are using homegrown citrus with no wax etc., add peels to a cold pan with water and sugar - 2:1 water:sugar. You can see here you just need enough water to barely cover. This is 3/4 C water and 3/8 C sugar.

Commercial citrus: before this step, boil then drain. Repeat two more times, then do the step above. Commercial citrus also has thicker skin. This helps break it down.



8) Bring to a boil, then reduce to a simmer, stirring frequently.



9) simmer for 15-30-whenever the peels become translucent.



10) transfer peels to a wire rack to dry for at least 3-4 hours. I covered the pan from my Ninja Foodi toaster oven/ dehydrator in Press ‘n Seal, and then put the dehydrator rack on top of that. I think you could dehydrate them a bit at this point too. The longer the better.



11) when dry (and by "dry" I mean still sticky - just not goopy - so don't expect true "dry") - option 1 - toss in sugar to coat. Options for this version (this is the Meyer lemons) : cake and cupcake garnish, salad addition, cocktail garnish, drop into your favorite tea, eat like candy - or save for this year’s fruitcake! Mix them into trail mix, granola, cakes and muffins.



12) Save the boiling syrup for cocktails or for glazing BACON. 🥓🍊this is a Culina Yogurt jar, which I hope I can continue to get during the apocalypse.



13) Get a stainless bowl with a slightly larger diameter than your smallest saucepan. Boil water in the saucepan. Put a bowl with just a FEW chocolate chips in it on top of the saucepan and turn the heat to low. Stir chips until melted. Dip orange peels into them. Put on wax paper and cool in the fridge or freezer. Enjoy. 💙 I’m dairy allergic so I used Enjoy life chips which are top 8 allergen free and delicious!
